We caught 50 fish when we were out in the boat with Willie, which is less than what we caught last year when we were out fishing with Willie but.... Anyway, we prepped them for smoking. We? Sis, Willie and me. They are currently sitting in a brine solution in Sis' fridge. Smoking commences tomorrow morning. EARLY! I'm supposed to report to Sis' house at 8 AM on Thursday morning. Tonight? For our family get-together? 5:30 PM...or earlier. I've started my list of things to bring over to Sis' place.

I made the homemade salsa this morning, only, I needed a lime. HTP poo-poo'ed my suggestion that I'd be able to find a lime at our Store in town. Hah! I bought two. I also need some cilantro but Willie assured me that he had some fresh stuff. Blink. He does? Here? I'd be interested in knowing what else Willie thinks is necessary for a week at The Lake with his family. I already know that he brought three onions but there really isn't anything odd about that. But....cilantro? Anyway, my salsa is all ready to go. I just need to chop up some fresh cilantro to add at the last minute.

HTP cooked up the Italian sausage that we bought the other day on our way home from The Big City. He chopped up some of it for me to put in my baked ziti. I baked up the ziti, cooled it on the top of the counter and it's sitting in the fridge right now. I'll top it with some mozzarella and Parmesan cheese and bake it again at Sis' place when I get there. Baked ziti always tastes best when the flavors have a chance to meld....so....I guess I should call this Twice-baked Ziti. And...I didn't actually have any ziti so I mixed together some penne and some rotini and some sun-dried tomato flavored shells. You use what you have when it comes to Italian cooking. I was going to make some Italian fried peppers but....forget about it. We'll have plenty of food. We always do.
